Loaded Potato & Meatloaf Casserole

Ingredients:

For the Meatloaf:

  • 1 ½ pounds (680 grams) ground beef
  • 1 cup (120 grams) bread crumbs
  • 2 eggs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • ½ cup (120 ml) milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley

For the Mashed Potatoes:

  • 3 pounds (1.36 kg) potatoes, peeled and cubed
  • ½ cup (120 ml) milk
  • ¼ cup (57 grams) butter
  • 1 cup (115 grams) shredded cheddar cheese
  • Salt and pepper to taste

For the Topping:

  • 1 cup (115 grams) shredded cheddar cheese
  • 4 strips bacon, cooked and crumbled
  • 2 green onions, sliced
  • Sour cream for serving (optional)

Instructions:

Preparing the Meatloaf:

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, combine the ground beef, bread crumbs, eggs, chopped onion, minced garlic, Worcestershire sauce, milk, salt, pepper, dried thyme, and dried parsley. Mix until well combined.
  3. Press the meat mixture evenly into the prepared baking dish.

Making the Mashed Potatoes:

  1. In a large pot, add the peeled and cubed potatoes. Cover with water and bring to a boil. Cook until the potatoes are tender, about 15-20 minutes.
  2. Drain the potatoes and return them to the pot. Add the milk and butter. Mash until smooth and creamy.
  3. Stir in the shredded cheddar cheese. Season with salt and pepper to taste.

Assembling the Casserole:

  1. Spread the mashed potatoes evenly over the meatloaf mixture in the baking dish.
  2. Sprinkle the remaining 1 cup of shredded cheddar cheese over the top of the mashed potatoes.

Baking and Topping:

  1. Bake in the preheated oven for 25-30 minutes, or until the meat is cooked through and the cheese on top is melted and bubbly.
  2. Remove from the oven and let it sit for a few minutes before serving.
  3. Sprinkle the crumbled bacon and sliced green onions on top of the casserole.
  4. Serve with a dollop of sour cream if desired.
