Blackstone Cheeseburger Quesadilla


  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 2 cups shredded cheddar cheese
  • 8 large flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup sour cream
  • 1 cup salsa
  • 1/2 cup pickles, chopped
  • 2 tablespoons butter


  1. Prepare the Ground Beef:
    • Heat a skillet or griddle (like the Blackstone) over medium-high heat.
    • Add the ground beef to the skillet and cook, breaking it apart with a spatula, until browned.
    • Drain any excess fat from the beef.
    • Add the taco seasoning and 1/4 cup of water. Stir well to combine and cook until the water has evaporated.
    • Transfer the seasoned beef to a bowl and set aside.
  2. Sauté Vegetables:
    • In the same skillet, add a bit of oil if needed and sauté the diced onion and red bell pepper until they are softened and slightly caramelized, about 5-7 minutes.
  3. Assemble Quesadillas:
    • Lay out 4 tortillas on a flat surface.
    • Evenly distribute the cooked ground beef onto each tortilla.
    • Sprinkle the sautéed onions and bell peppers over the beef.
    • Add a generous amount of shredded cheddar cheese on top.
    • Place another tortilla on top of each filled tortilla, pressing down slightly to adhere.
  4. Cook the Quesadillas:
    • Preheat the griddle or a large skillet over medium heat.
    • Add a small amount of butter to the griddle/skillet and let it melt.
    • Carefully place a quesadilla onto the griddle/skillet.
    • Cook for about 3-4 minutes on each side, or until the tortillas are golden brown and crispy, and the cheese is melted inside.
    • Repeat with the remaining quesadillas, adding more butter as needed.
  5. Serve:
    • Remove the quesadillas from the griddle/skillet and let them cool for a minute.
    • Cut each quesadilla into quarters.
    • Serve with shredded lettuce, diced tomatoes, sour cream, salsa, and chopped pickles on the side.
