
Ingredients:
2 lbs (2 packages) Microwave Ready Potatoes
1/2 lb (about 6 slices) Bacon
1/2 cup White vinegar
1 tbsp Sugar
1 tbsp Old-fashioned mustard seeds
2 cloves Garlic, minced
1 tbsp Dried dill
1 red onion, finely diced
Salt and pepper to taste
Preparation
Step 1
Remove the trays of Potatoes Grelots from the cardboard packages and remove the seasoning packets and save them for later (use them in the dressing).
Step 2
Microwave one tray of potatoes at a time for 5 minutes.
Step 3
In a large skillet, begin cooking the bacon slices. Once the bacon is cooked, set aside (keep the bacon fat in the skillet, we’ll use it again in a few minutes). Crumble the bacon once it has cooled.
Step 4
Begin making the dressing. In a medium bowl, combine white vinegar, sugar, mustard, minced garlic and dill. Whisk together. Add the cheese seasonings from the two packets you set aside earlier.
Step 5
Now, back to our skillet that we used for the bacon. Add the diced red onions to the bacon fat. Cook the onions over medium heat for a few minutes, until they become soft. Season with a little salt and pepper.
Step 6
Now stir in the small potatoes that you cooked in the microwave. Pour in the dressing and crumbled bacon. Mix it all together and cook for 4-5 minutes. This will help thicken the dressing slightly.
Step 7
Place in a serving bowl. Enjoy while it’s hot!
