The BEST Pasta Salad


240 g pasta – fusilli, penne, rotini or farfalle
1 red bell pepper
1 zucchini
6 cherry tomatoes
1 green onion
120 g mixed black and green olives
60 g grated parmesan cheese
180 g mozzarella cheese
50 g of parsley and basil
8 cl of red wine vinegar
1/2 tsp dried oregano
12 cl olive oil
1/2 tsp of salt
1/2 tsp of pepper


First pour water into a large saucepan, add salt and bring to a boil.
Then add the pasta and cook for 6 to 10 minutes – check the recommended cooking time on the package – drain and rinse under cold water.
While the pasta is cooking, cut the bell pepper into small pieces, remove the seeds, cut the onion into small slices and cut the cherry tomatoes in half.
Wash the olives and cut them in half.
In a salad bowl, prepare the dressing by mixing vinegar, oil, salt, pepper and oregano and then add your vegetables on top.
Then add the pasta, parmesan, mozzarella with parsley and basil and mix it all together…. put it in the fridge until serving.
