1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon salt
3 large eggs
1 1/4 cups milk
2 tablespoons melted butter (plus more for cooking)

Instructions
In a small bowl, sift together the flour, sugar, and salt. Set this mixture aside for now.
Next, take a medium bowl and whisk together the eggs. Using a hand mixer, beat the eggs for about 4-5 minutes until they are lemon yellow and slightly thickened. Now, whisk in the milk along with the melted butter until everything is smooth and well mixed.
Gradually add the flour mixture to the egg and milk mixture, doing so 1/4 cup at a time. Whisk thoroughly each time until you’ve created a smooth batter.
Heat a skillet over medium heat and melt a little butter in it. Pour about 2 tablespoons of the batter onto the skillet. Adjust the amount based on how large you like your pancakes.
Cook the pancakes for about 2 minutes on one side until they are golden brown. Flip them over and cook the other side until it’s also beautifully golden. Remove the pancakes from the skillet and repeat the process until all the batter is gone.
