Spinach Casserole with Feta Cheese

Ingredients

3 large Eggs, beaten
2 cups Cottage Cheese
10 ounces Frozen Chopped Spinach, thawed and very well drained
1/3 cup Crumbled Feta
1/3 cup Diced Sweet Onion
1/4 cup Melted Butter
2 tablespoons Freshly Grated Parmesan
1/8 teaspoon Black Pepper
1/8 teaspoon Garlic Powder
A dash of Nutmeg

Instructions

Prep Work: First things first! Preheat your oven to 350 degrees F. While the oven warms, grab a 1 1/2-quart (9-inch square) casserole dish and grease it to prevent sticking. This will help our dish bake beautifully.

Combine Ingredients: In a large mixing bowl, it’s time to bring everything together. Add your beaten eggs, cottage cheese, well-drained spinach, crumbled feta, diced sweet onion, melted butter, grated Parmesan, black pepper, garlic powder, and a dainty dash of nutmeg. Mix everything until it’s well combined and looks smooth and tasty.

Bake the Casserole: Now, transfer this lovely mixture into your prepared casserole dish. Pop it into the oven and bake uncovered for about 40-45 minutes. You know it’s ready when the center is nearly set and it has a lovely golden hue.

Serve: Once it’s done baking, allow the casserole to cool for about 5-10 minutes before slicing. Serve it warm and enjoy every comforting bite of this flavorful dish!
