2 fresh cucumbers
2/3 teaspoon of salt
2 large cloves of garlic, finely minced
1 tablespoon of Chinese black vinegar (Chinkiang vinegar)
1 tablespoon of chili oil
1/2 teaspoon of sugar
1/2 teaspoon of regular soy sauce
1 teaspoon of sesame oil
Instructions
Start by giving your cucumbers a good rinse under cold water. Then, take a heavy knife or a rolling pin and gently smack the cucumbers to slightly crush them. This effect will help the cucumbers release their juices and absorb the dressing. After gently smacking, cut them into bite-sized pieces.
Next, place those lovely cucumber pieces into a mixing bowl. Sprinkle the salt over them and allow the mixture to rest for about 10 minutes. This step is crucial as it draws out the excess water, ensuring a crisp and delightful salad.
After their brief rest, drain the cucumbers to remove any accumulated liquid.
Then, it’s time to add those wonderful flavors! Toss in the minced garlic, Chinese black vinegar, chili oil, sugar, and soy sauce. Mix it all together gently, letting the cucumbers mingle and soak up the flavor.
Just before you serve, drizzle the sesame oil over the salad and stir once more to incorporate everything nicely.
