Ingredients
12 graham crackers
2 tablespoons brown sugar
1/2 cup butter, melted
2 1/2 cups milk, cold
1/4 teaspoon green food coloring
2 teaspoons mint extract
5.1 ounces box of instant vanilla pudding mix
8 ounces container of whipped topping, thawed
Instructions
First, let’s prepare our pie dish. Grease a 9-inch pie dish with butter or shortening, then set it aside, ready for the crust.
Next, gather those graham crackers and add them to a food processor along with the brown sugar. Blend until these crackers become fine crumbs.
While the food processor is working at a low speed, slowly pour in the melted butter. Continue blending until the crumbs begin to stick together beautifully.
Firmly press these crumbs into the bottom and along the sides of your prepared pie dish. Now, pop it in the freezer for about 15 to 20 minutes, allowing that crust to firm up nicely.
While you wait, whisk together the cold milk, green food coloring, and mint extract in a large bowl. Keep whisking until the milk turns a lovely shade of green.
Now, add the box of instant vanilla pudding mix to the milk mixture. Blend until the pudding starts to thicken. Let it sit for about five minutes to thicken even more.
Finally, fold the whipped topping into your pudding mix until it’s well combined. Spoon this delicious filling into the chilled crust and smooth out the top.
Place your pie back in the freezer and let it set for at least six hours. Once it’s completely set, top it with some whipped cream and maraschino cherries if you like. Serve it cold and enjoy every heavenly bite!
