Seafood Lasagna

Ingredients

12 lasagna noodles, cooked
1 pound crab meat or imitation crab
12 ounces cooked scallops, quartered
1 pound cooked shrimp
2 cups mozzarella cheese, shredded
2 cups parmesan cheese, shredded
18 ounces canned clam chowder
1 cup heavy whipping cream
3 tablespoons lemon juice
1/2 cup parmesan cheese, grated
1 teaspoon salt
1/2 teaspoon pepper
16 ounces ricotta cheese
1 egg
2 teaspoons minced garlic
1/2 cup fresh chopped parsley
1/2 teaspoon salt

Instructions

Begin by cooking the lasagna noodles according to the package instructions. While the noodles are cooking, preheat your oven to 350°F (175°C) and grease a lovely 9×13-inch baking dish with a nonstick cooking spray.
In a large mixing bowl, combine the crab meat, cooked scallops, and shrimp. Give it a gentle stir and set it aside.
In another bowl, mix together the shredded mozzarella and parmesan cheese. This will create a delightful cheesy layer that will melt beautifully in the oven.
Now, for the sauce! Whisk together the clam chowder, heavy whipping cream, lemon juice, grated parmesan cheese, salt, and pepper in a separate bowl. Taste and adjust if necessary—your palate is the best judge!
Let’s prepare the ricotta cheese mixture. In a medium bowl, combine the ricotta cheese, egg, minced garlic, chopped parsley, and a dash of salt. Mix it all together until it is nice and creamy.
To assemble your lasagna, start by spreading a thin layer of the clam chowder sauce at the bottom of your prepared baking dish. This will help keep the noodles from sticking.
Lay a layer of cooked lasagna noodles over the sauce. Then spread one-third of the ricotta cheese mixture over the noodles, followed by one-third of your seafood mixture and half a cup of the shredded cheese blend.
Repeat these layers twice—layering noodles, ricotta mixture, seafood, and cheese. Finish with a final layer of shredded cheese on top for that golden crust.
Cover your baking dish with foil and bake in the preheated oven for 30 minutes. After that, uncover the lasagna and bake for an additional 10 minutes until the cheese is bubbly and golden.
