Pretzel Bites Recipe

Ingredients

1 1⁄2 cups warm water
1 packet active dry yeast (or 2 1/4 teaspoons)
1 tablespoon granulated sugar
1 1⁄2 teaspoons Kosher salt, plus extra for topping
4 cups all-purpose flour
1⁄3 cup baking soda (for boiling water)
1 large egg, whisked
Melted butter, for brushing (optional)

Instructions

In a small bowl, stir together warm water, yeast, and sugar. Let it sit for 3 to 5 minutes until the mixture becomes foamy. Add Kosher salt and stir to combine.
Preheat the oven to 425°F and line a baking sheet with a silicone mat or parchment paper.
In the large bowl of a stand mixer fitted with the dough hook attachment, combine flour and yeast mixture. Knead for 5 minutes until a smooth dough forms. Alternatively, knead by hand.
Divide the dough into 6 equal sections. Roll each section into ropes about 15 inches long and 1 inch thick. Cut the ropes into 1 1/2 to 2-inch pieces using scissors. Optional: cut a ‘t’ or ‘x’ on the top of each pretzel bite.
In a small pot, bring about 8 cups of water and 1/3 cup baking soda to a boil over medium heat. Boil about 8 pieces of dough at a time for 30 seconds, then remove with a slotted spoon and place on the prepared baking sheet.
Brush the boiled dough lightly with beaten egg and sprinkle with Kosher salt.
Bake the pretzel bites for 8 to 10 minutes, or until golden brown. If desired, turn the oven to broil for the last minute to brown the tops further. Transfer the pretzel bites to a cooling rack and brush with melted butter, if using.
Serve warm with your favorite dipping sauce and enjoy the delicious homemade pretzel bites!
