Ingredients
1/2 cup (1 stick) unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup peanut butter
1 large egg
1 teaspoon vanilla extract
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
Granulated sugar (for rolling)
Chocolate kisses (about 30, unwrapped)
Instructions
Preheat the oven to 375°F (190°C) and line baking sheets with parchment paper or silicone mats.
In a large bowl, beat together the butter, granulated sugar, brown sugar, and peanut butter until smooth and creamy.
Add the egg and vanilla extract, mixing well until combined.
In a separate bowl, whisk the flour, baking soda, and salt. Gradually stir the dry ingredients into the wet mixture until a soft dough forms.
Roll tablespoons of dough into balls, coat each ball in granulated sugar, and place them on the prepared baking sheets about 2 inches apart.
Bake the cookies for 8-10 minutes, or until the edges are lightly golden.
Remove from the oven and immediately press a chocolate kiss into the center of each cookie. The edges may crack slightly.
Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
