Ingredients
1 box white cake mix
12 ounces orange Crush soda
1 cup butter (softened)
3 cups confectioner’s sugar
2 tablespoons powdered orange jello
3 tablespoons orange Crush soda
1/2 teaspoon vanilla extract
Instructions
Preheat the oven to 350°F (or 180°C for our metric friends).
Line each of the 24 regular-size muffin cups in a cupcake pan with cupcake liners.
In a large mixing bowl, combine the cake mix and orange Crush soda. Mix until smooth, taking about 2 to 3 minutes. Don’t forget to scrape the sides of the bowl!
Carefully pour the resulting batter into the muffin cups, filling each about three-quarters full.
Bake in your preheated oven for 15 to 18 minutes, or until a toothpick inserted in the center comes out clean.
Once baked, remove them from the oven and let them cool in the pan for about 10 minutes. After that, transfer them to a cooling rack to cool completely.
For the delicious orange frosting, take a medium bowl and combine softened butter and confectioner’s sugar, adding one cup of sugar at a time. Then mix in the powdered orange jello, orange Crush soda, and vanilla extract until smooth and creamy.
Frost your cooled cupcakes generously and decorate as you desire!
