No-Bake Peanut Butter Cream Pie

Ingredients

25 Oreo cookies
6 tablespoons melted butter
1 can sweetened condensed milk, divided
1/2 cup semi-sweet chocolate
3 teaspoons vanilla extract, divided
1/2 cup creamy peanut butter
2 cups whipping cream, cold
3 tablespoons powdered sugar

Preparation

Crush Oreo cookies in a plastic bag with a rolling pin or food processor.

Mix cookie crumbs and melted butter with a fork in a bowl.

Then press the mixture into a pie plate and chill in the refrigerator.

Melt the chocolate in a microwave-safe bowl. As a general rule, the chocolate will take about 1-2 minutes to melt on high, stirring every 30 seconds before continuing to microwave.

Stir 1/2 can sweetened condensed milk into melted chocolate.

Stir in 1 teaspoon vanilla extract. Let stand for a few minutes, stirring occasionally so it doesn’t get too hard.

Stir in remaining sweetened condensed milk in another bowl.

Add peanut butter and 1 teaspoon vanilla.

Stir until smooth.

Whip cream, powdered sugar and 1 teaspoon vanilla extract on high speed with a mixer until stiff peaks form.

Gently fold 1 cup of the whipped cream into the peanut butter mixture and spread over the crust.

Stir chocolate mixture until smooth. Gently fold 1 cup of whipped cream into chocolate mixture and spread over peanut butter layer.

Top with remaining whipped cream and chocolate shavings, if desired.
