Kachumbari (Kenyan Tomato and Onion Salad)


1 red onion, diced
2 teaspoons salt
4 large tomatoes
300 g frozen avocados or 2 small avocados)
1 small chili pepper (optional)
1 to 2 spoonfuls of garlic powder
juice of one or two limes
A handful of chopped fresh coriander


1 Place the onions in a bowl covered with water and add the salt, mix well and leave to soak for 10 minutes.

2 Meanwhile, dice the tomatoes and chilli (optional), place them in a bowl and add the diced avocado, garlic powder and drained onions.

3 Pour in the lemon juice and sprinkle with coriander.
