Hollandaise Sauce


Yolk of three large eggs
1/4 teaspoon salt
Pinch of black pepper
1 tablespoon fresh lemon juice
1/2 cup (125 mL) butter


In your blender, add the egg yolks, salt, pepper and lemon juice.
Melt the butter in the microwave or in a saucepan. It must also be hot.
With the cover on, blend the egg yolks for 3 seconds.
While the blender is on, remove the cover, or better yet, the small center plastic of your cover, and quietly add the hot butter while blending.
Season with salt and pepper.
Serve on your lunch.
