4 pcs beet (raw or precooked)
3 cloves of garlic
1 pinch of Mediterranean spices (oregano, thyme)
1 pinch of peppercorns
1 teaspoon powdered sugar
400 ml red wine vinegar
1 pinch sea salt
Peel the beet and cut into cubes of about one centimeter. Bring to a boil in a pot of salted water and cook for about a quarter of an hour until they are soft.
Strain, mix with the vinegar, spices, finely chopped garlic, sugar and some of the cooking water and boil again for five minutes. Pour into jars.
In a pretty jar, they also make a nice souvenir.
