2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup granulated sugar
½ cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1 cup mashed ripe bananas (about 2–3 bananas)
1 cup crushed pineapple, drained
½ cup shredded coconut
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
In a large bowl, mix the sugar and oil until smooth. Add eggs, vanilla extract, and mashed bananas. Stir well to combine.
Fold in the crushed pineapple and shredded coconut.
Gradually add the dry ingredients to the wet ingredients. Stir gently until just combined. Avoid overmixing.
Pour the batter into the prepared loaf pan.
Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
