Chocolate Mint Brownies

Ingredients

1 cup unsalted butter
2 cups sugar
4 large eggs
1 1/2 teaspoons vanilla extract
1/2 teaspoon peppermint extract
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/4 teaspoon salt
1 cup chocolate chips
1/2 cup chopped mint candies

Instructions

Preheat your oven to 350°F (175°C). This is an important first step to ensure your brownies bake evenly.
Line a 9×13-inch baking pan with parchment paper to prevent sticking. This little trick makes for easy removal later.
In a medium saucepan over medium heat, melt the butter and sugar together, stirring gently until the sugar is mostly dissolved.
Once melted, remove the saucepan from the heat and let it cool slightly—this will help keep the eggs from cooking when added.
Beat in the eggs, one at a time. Then, stir in the vanilla extract and peppermint extract for that refreshing minty flavor.
In a separate bowl, sift together the flour, cocoa powder, and salt. Gently fold this mixture into the wet ingredients until just combined. Be careful not to overmix!
Now, it’s time to add in the chocolate chips and chopped mint candies. Stir them in, and you’ll have a luscious brownie batter.
Spread the batter evenly into the prepared pan. Make sure you take your time to get it nice and level.
Bake in the preheated oven for 25-30 minutes. You will know they’re done when a toothpick inserted into the center comes out with a few moist crumbs.
Once baked, allow your brownies to cool completely in the pan before slicing them into delightful squares.
