Half a head of lettuce, coarsely chopped (or a little more, depending on taste)
1/2 cup cooked chicken, chopped
1/2 cup cheddar cheese, diced
1/2 cup walnuts, lightly toasted
1/2 cup celery, cut into small cubes
1/2 cup seedless green grapes, halved
1 large green apple, peeled and diced
4 tablespoons mayonnaise
1 tablespoon fresh lemon juice
Salt and pepper to taste
Mix together mayonnaise and lemon juice in a large bowl. Add salt and pepper and mix.
Add chicken, apples, celery, walnuts and grapes and toss to coat. Finally add lettuce and toss. Serve immediately.
