Cheesy Sausage and Rice

Ingredients

1 pound smoked sausage, sliced into rounds
1 cup long-grain white rice
1 onion, finely chopped
1 bell pepper, diced
2 cloves garlic, minced
2 cups chicken broth
1 cup shredded cheddar cheese
1/2 cup heavy cream
Salt and black pepper to taste
Green onions for garnish (optional)

Instructions

In a large skillet or pan, begin by cooking the sliced sausage over medium heat until it becomes beautifully browned. Once it has turned golden, carefully remove the sausage from the pan and set it aside for later. In that same lovely skillet, add the chopped onion, diced bell pepper, and minced garlic, sautéing until the vegetables are tender and fragrant.

 

Next, toss in the rice and allow it to cook for 1-2 minutes, letting it toast lightly. This step enhances the flavor of your dish! Pour in the chicken broth and bring it to a gentle boil. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for 15-18 minutes until the rice is tender and the liquid is absorbed.

 

Once the rice is cooked, stir in the reserved sausage, shredded cheddar cheese, and heavy cream. Cook just until the cheese melts into a creamy goodness. This is the moment when everything comes together. Don’t forget to season with salt and black pepper to taste. If you like, you can sprinkle some chopped green onions on top as a garnish.
