Cheeseburger Soup

Ingredients

1 pound ground beef
3/4 cup chopped onion
3/4 cup shredded carrots
3/4 cup diced celery
1 teaspoon dried basil
1 teaspoon dried parsley flakes
4 tablespoons butter, divided
3 cups chicken broth
4 cups peeled and diced potatoes
1/4 cup all-purpose flour
2 cups Velveeta processed cheese, cubed (or 2 cups shredded cheddar cheese)
1 1/2 cups milk
3/4 teaspoon salt
1/4 to 1/2 teaspoon pepper
1/4 cup sour cream

Instructions

 

To start this delightful soup, brown the ground beef in a 3-quart saucepan over medium heat until it is nicely cooked. Drain any excess fat and set the beef aside. In the same saucepan, add 1 tablespoon of butter and sauté the chopped onion, shredded carrots, parsley flakes, basil, and diced celery until they become tender and fragrant.

 

Next, combine the chicken broth, diced potatoes, and the cooked ground beef back into the saucepan. Bring this mixture to a boil, reduce the heat, cover, and let it simmer for about 10 to 12 minutes, until the potatoes are tender. Meanwhile, in a small skillet, melt the remaining 3 tablespoons of butter. Stir in the flour and cook, stirring constantly, for 3 to 5 minutes, or until it becomes bubbly and slightly golden.

 

Now, add the flour mixture to the soup and bring everything back to a boil. Cook and stir for 2 minutes, then lower the heat. Stir in the cheesy goodness of Velveeta or cheddar, along with the milk, salt, and pepper. Keep mixing until the cheese melts smoothly. Finally, remove the pot from heat and blend in the sour cream for a creamy finish. Serve hot and enjoy your comforting Cheeseburger Soup!
