Carrot cake with Mascarpone Frosting

Flour – 160g
Brown sugar – 100 g
Vegetable oil – 120 gr
Eggs – 2 pcs.
Walnuts – 70g
Grated carrots – 240 gr gr
Baking powder – 1 tsp.
Soda – 1/2 tsp.
Cinnamon – 1/2 tsp.
Ginger – 1/2 tsp.
Nutmeg – a pinch
Orange zest 1 tsp.

Mascarpone Cheese – 250g
35% cream – 120 – 130 ml
Powdered sugar – 50gr


  1. Mix the dry ingredients: sifted flour, baking powder, baking soda and all the spices. Beat eggs with sugar, add oil, add vanilla (liquid). Pour the dry mixture here and mix. Add grated carrots , after lightly squeezing them, removing excess juice! Important – the carrots should not be too wet! Add the orange zest and crushed walnuts. Stir everything well, the dough is not liquid!
  2. Spread out our dough on molds! We line the bottom of the molds with parchment paper and butter the sides! This amount would make three 16 cm. ( You can make two layers) Do not make the layers too high, they will be difficult to bake ❗️ Place in an oven preheated to 180° for 30-35 minutes. (Check the readiness with a stick, it should stay dry) ⠀ ⠀
  3. The dough can be put on a baking tray lined with baking paper instead of being poured into moulds! This makes baking easier and faster! The crusts bake in 20 minutes. Make the cream: mix the cheese with the cream and powdered sugar with a mixer on medium speed! Lather the cream on the cakes and decorate as you wish! Our incredibly delicious cake is ready! Enjoy!
