Ingredients
For the Carrot Cake Bars:
2 cups grated carrots
1 1/2 cups all-purpose flour
1 cup granulated sugar
1/2 cup packed brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
1/4 tsp ground nutmeg
3/4 cup vegetable oil
3 large eggs
1 tsp vanilla extract
For the Cream Cheese Frosting:
8 oz cream cheese, softened
1/4 cup unsalted butter, softened
2 cups powdered sugar
1 tsp vanilla extract
Instructions
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
Add the grated carrots, vegetable oil, eggs, and vanilla extract to the bowl. Stir until the mixture is just combined.
Pour the batter evenly into the prepared baking dish.
Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean. Let the bars cool completely in the pan.
While the bars are cooling, prepare the frosting. In a medium bowl, beat the cream cheese and butter until smooth. Gradually mix in the powdered sugar, one cup at a time, and stir in the vanilla extract.
Once the bars are cool, spread the frosting evenly over the top.
Cut the frosted bars into squares or rectangles and serve.
