Baked Oatmeal Cups

Ingredients

1⁄2 cup unsweetened applesauce (or mashed banana)
2 whole eggs
1⁄3 cup peanut butter
1⁄4 cup brown sugar
1 1⁄4 cups milk
1 tsp vanilla extract
3 cups old-fashioned oats
1 tsp baking powder
1 tsp cinnamon
1/3 cup mini chocolate chips, plus more for topping
1 Tbsp butter, melted

Instructions

Preheat your oven to a cozy 350 degrees Fahrenheit. Spray a 12-cup muffin tin with a bit of non-stick spray or line with charming paper liners.
In a lovely mixing bowl, combine the applesauce, eggs, peanut butter, brown sugar, vanilla extract, and milk. Whisk these ingredients together until they are well combined and smooth.
In a separate bowl, whisk together the oats, baking powder, and cinnamon. Stir in the mini chocolate chips to add a delightful sweetness.
Slowly and gently fold the oat mixture into the wet ingredients, mixing until they are harmoniously combined.
Add in the melted butter and give it a good stir to blend it all together.
Carefully divide the batter evenly between the 12 muffin cups, ensuring that each cup gets an equal share of this tasty mixture.
Top each cup with a few extra chocolate chips for that little touch of indulgence, and then place them in the oven to bake for 18-20 minutes. You’ll know they’re ready when they are beautifully set and beginning to turn golden brown on top.
Once they are baked to perfection, remove them from the oven and allow them to sit for about 5 minutes. Afterward, gently transfer them to a wire rack to cool completely.
Once fully cooled, store your Baked Oatmeal Cups in an airtight container in the fridge. They’ll remain fresh for up to a week!
