Ingredients
2 cups all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg (optional)
1/2 teaspoon salt
1/2 cup milk (whole milk recommended)
2 large eggs
2 tablespoons unsalted butter, melted
2 large apples (Granny Smith or Honeycrisp), peeled, cored, and diced
1 teaspoon vanilla extract
For the Glaze:
1 cup powdered sugar
2–3 tablespoons milk
1/2 teaspoon vanilla extract
Instructions
Prepare the Apples: Toss the diced apples with a sprinkle of cinnamon in a small bowl. Set aside.
Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg (if using), and salt.
Combine Wet Ingredients: In another bowl, mix the milk, eggs, melted butter, and vanilla extract until smooth.
Combine Wet and Dry Mixtures: Add the wet ingredients to the dry mixture and stir until just combined. Fold in the cinnamon-coated apples gently. Do not overmix.
Portion the Batter: Use a spoon or ice cream scoop to drop mounds of batter onto a parchment-lined baking sheet.
Bake: Preheat the oven to 400°F (200°C) and bake the fritters for 15–18 minutes, or until golden brown and a toothpick comes out clean.
Prepare the Glaze: While the fritters cool slightly, mix the powdered sugar, milk, and vanilla extract to make the glaze.
Glaze the Fritters: Drizzle the glaze over the warm fritters. For extra sweetness, add a second layer of glaze once the first layer sets.
