Ingredients
Nonstick cooking spray, for greasing
1 1⁄2 cups all purpose flour
2 tsp baking powder
1⁄2 tsp kosher salt
2 tsp cinnamon
1⁄4 cup unsalted butter (melted)
1⁄4 cup granulated sugar
1 large egg
1⁄2 tsp vanilla extract
1⁄2 cup no-sugar added applesauce
1 1⁄2 cups peeled and finely diced Honeycrisp apples (about 2 medium apples)
Glaze: 2 cups powdered sugar
1⁄3 cup plus 2 TBSP apple cider or apple juice
Instructions
Preheat your oven to 400 F (200 C) and don’t forget to spray a baking sheet with the nonstick cooking spray.
In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon until it’s all nicely blended.
In a large bowl, take the melted butter and whisk it together with the sugar. Then add in the egg, followed by the vanilla extract and applesauce, mixing it all well.
Now, stir in the flour mixture, and gently fold in the diced apples.
Use a tablespoon to scoop out the batter and place it in mounds on your baking sheet, leaving a few inches between each.
Pop the baking sheet into the oven and bake for 10 minutes.
While your fritters are baking, whisk together the powdered sugar and apple cider in a small bowl until it’s nice and thin to create your glaze.
Once the fritters have baked, brush the glaze over each one, and broil for 2-4 minutes until they’re beautifully caramelized. Keep a close eye on them and rotate the baking sheet every minute!
After broiling, brush any remaining glaze over the fritters and let them set on the baking sheet for 15 minutes until the glaze hardens.
